Chicken legs and thighs go in to my easy chicken recipe, but you could also use chicken breast if you prefer.
This is my really tasty way to treat the cheaper cuts from a chicken – the legs and thighs that I think are the tastiest part of the bird. Once the meat has been marinated in herbs and olive oil with salt and pepper, it's roasted in the oven on top of seasonal vegetables. Apart from preparing the herbs and vegetables, it's a simple meal.
Chicken in marinade
ingredients
This is what I used:
2 thighs and legs
2 cloves of garlic
small bunches of rosemary, sage and lemon mint.
One large potato
one small onion
one carrot.
A tablespoon of olive oil
salt and freshly ground pepper.

Chop up the herbs and add the oil to it then sprinkle some lemon juice in to it.
Cut slashes in the chicken and stuff the slashes with the herby marinade. Leave it in the fridge for an hour.
Peel the vegetables and simmer the potato and carrot for ten to twelve minutes to par boil them.
Place the partly cooked veg in the bottom of a baking tray, place the marinated chicken on top of the veg and scatter the onion and garlic around them. Pour the remainder of the marinade over the top, cover with foil and place in a pre heated oven at 200C gas mark 6 for 40 minutes. Remove the foil for the last ten minutes to make the whole nice and crispy.
Now, wasn't that an easy chicken meal?
