One of my favourite dishes in vegetarian cooking is this Aloo Parata. It's a spicy potato and onion Indian recipe It's easy to make and is a great snack or nibble. Trouble is, I make them and then try one, then another, and another......



Fry the spices

Indian recipe

200 grams plain flour

1 teaspoon salt

1 teaspoon sugar

half a teaspoon of baking powder

1 egg

small amount of milk

Mix dry ingredients together.

Break the egg into the mixture.

Whisk with a fork

add the milk slowly until it forms a dough.

Work the dough, stretching and kneading until the dough is soft and smooth.

Cover with cling film and put in the fridge.

For the filling:

Chop an onion and gently fry it in oil.

When soft, add chopped chillis, ginger,and garlic. Add the dry spices: I use turmeric, coriander, garam masala and cumin to the onion and cook. The choice of spices is up to you.

Cooking the spices for a while blends them in to the mixture and stops them from being bitter.

Boil a large potato and mash it. When everything is cool, add the mash to the onion filling and mix together.

Make this mixture into small balls.

Take the dough out of the refrigerator and roll it into a sausage shape. Cut into pieces. Roll the pieces into balls, then flatten with a rolling pin.

Place small balls of the mixture in the centre of the disc and bring the sides of the dough up to meet at the top.

Turn them over so that the joins are underneath and flatten them out with the rolling pin. Fry on both sides and watch those beauties rise in the pan.

Fry these healthy vegetarian goodies until golden.
