I wanted to make a Tortilla wrap, and after reading a lot of recipes I decided to do a variation on the theme. I would use sausage meat as the main ingredient, and I wouldn't fry everything first. It turned out really well.

My version of Tortillas

Ingredients:

half a pound of sausage meat,

half an avocado,

half a red onion,

olive oil, salt and pepper,

cheddar cheese.

I tried a new way of making them, for me. I thought, 'why fry everything together when you don't need to?'

I made some pork sausage meat, chopped it up and put it in a bowl with half an avocado,chopped, half a diced onion, salt and pepper, and a splash of olive oil. Mixed them all together.

I put a large tablespoon of this mix in a tortilla wrap then grated some cheddar cheese over it and folded up the sides, then rolled it up from the bottom. I made three of these and put them in an oven tray with the seam down and drizzled some more olive oil over them. Pre-heated the oven to gas mark 5, 190C.

I Covered the tortillas with aluminium foil and put them in the top of the oven. After 20 minutes they were nice and hot right through, so I took the foil off and left them for another ten minutes. I just caught them at the right time because another five minutes and they would have been nearly burnt. As it was they were just starting to go a deep brown at the ends.

I grated some more cheese over them and melted it under the grill for five minutes.

I served them with an egg salad. They were really good!
