How to Make vegetarian sausage
Easy vegetarian sausage
These meat free vegetarian sausages are easy to make, delicious in taste and can be eaten hot or cold.
The ingredients are simple and they are probably in your store cupboard now, so no planning and shopping are needed.
What you will need are :
2 ounces of butter
a splash of cooking oil
A tablespoon of worcester sauce.
100 grams or 4 - 5 ounces of porridge or other types of oats
a small onion
salt and pepper to taste.
In this batch of vegetarian sausage I added a mixture of spices called Jalfrezi Masala, which has cumin, taragon coriander and loads more powdered spices in it, but you can add your own taste in spices or leave them out altogether as the sausages are very tasty without them. Spices just give them an eastern flavour.

Method
First melt the butter and add the oil to it to stop the butter from burning.
Add the finely chopped onion and cook until soft.
Now add the oats and stir until they are coated with the oils.
Add water and stir to a thin consistency. It will thicken as the oats absorb the water.
Add the worcester sauce and the salt and pepper.
Cook for about fifteen minutes stirring constantly and add more water to keep it nicely thickened but not solid.
Again it will thicken when cooled.
Allow the mixture to cool to room temperature then put it in the refrigerator for an hour.

When the sausage mix is cold you can either stuff some sausage skins with it or make it into sausage shapes or even burger shapes. They can be fried, dipped in batter and deep fried, steamed or baked.
If making shapes to bake, dust the shapes with flour before baking, then bake in the preheated oven at gas mark 7, 220 C for fifteen to twentyfive minutes.
You can experiment with these sausages by adding herbs or different spices. The combinations are endless for this good vegetarian food.
